Are there any differences between the original, Legends, and Definitive Edition I should know about pertaining to the weapons? One thing I want you to be aware of, though, is many items (particularly OoT ones) later appear as character-specific weapons in Hyrule Warriors, including the gauntlets and scales, so I suggest you find a list of those so you don't overlook anything.
